So I was looking through some cook books last night when I found this recipe for pancakes. They looked amazing and I wanted some so badly, I then got up the next morning and decided to make pancakes in my christmas pajamas and with my messy hair!
You're going to need:
175g self-raising flour
1/2 tsp baking powder
1/2 tsp ground cinnamon (I didn't use cinnamon but I'm sure it will taste good!)
2 large egg whites
1 tbsp caster sugar
225ml semi-skimmed milk
1 ripe banana (I didn't use banana either)
1tsp sunflower oil (for frying)
200g mixed fresh berries (omg this would taste even nicer with delicious berries)
4tsp golden syrup/honey
You're going to need:

200g mixed fresh berries (omg this would taste even nicer with delicious berries)
4tsp golden syrup/honey
Sift the flour, baking powder and cinnamon into a large bowl. Whisk the egg whites into a separate bowl until stiff and whisk in the caster sugar.
Stir in the milk slowly and gradually into the flour mixture then beat hard to get rid of any lumps (I didn't whisk as hard as I could but when you add the other ingredients in a minute its really hard so I would recommend whisking the mixture really well). If you are using a banana cut it into thin slices and all to the mixture.
Fold in some of the egg white until it's mixed in well and then add the rest. Fold in this mixture because this is how they become light and fluffy.
Brush a large pan with some oil and add 4 large spoonfuls of the batter into the pan, spacing them well apart. Cook for about 1-2 minutes on one side and flip when you can see air bubbles on the upward facing side.
Put the pancakes on a plate and add fresh berries and syrup to finish them off!
